New Flickr Stats

Many of you Flickrites may have noticed a new link on photo pages: Photo Stats.  Flickr now provides detailed statistics about your photos!  But, there’s a catch: you have to turn them on.

A number of years ago I ate breakfast in a restaurant in the Midwest. I ordered pancakes. What I was served blew me away! They were the lightest, fluffiest pancakes I have ever experienced! Most of the pancakes I’ve eaten felt like an iron bar in my stomach for hours afterwards. Not these. There was something very different about these particular pancakes. A Secret Ingredient.

Mini Park #1
Land is at a premium in Taiwan. City planners put parks in virtually any small lot they can use for that purpose as opposed to the giant parks that exist in other countries where land is plentiful. I’ve always appreciated these mini, and sometimes, micro parks and over the new days and weeks I will introduce you to some of them. They can be a fun, almost private place where you can relax and enjoy the wonderful weather we have in Taiwan.

Over the last 4 years I have traveled on an international flight on average, about every 30 days. I’ve gone to areas of the world that are highly developed, right down to places where you have to pump well water for your shower. This series will share my insights on international travel, and will hopefully save you some hassles and headaches while making your travel experiences more enjoyable.

Laohukou Revisited

Hui-chen’s sister Ping-chen came over Saturday evening, and we took her to Laohukou Old Street area on Sunday. I’m getting tired of Laohukou because I think it’s way over-rated. Dasi Old Streets is way better and Dasi seems to retain more of the authentic flavor than Laohukou. Nevertheless, Laohukou is nearby, so off we went after a Sunday morning pancake breakfast.

Perfect Pancake
This is the only food photo for this article. I suggested that Hui-chen try using the teppanyaki pan because it’s very easy to control and it should make perfect pancakes. The results speak for themselves. The batter features Bushman’s Secret Ingredient that makes the pancakes light and fluffy. Anyone care to guess what that might be?

Sound Off! - Television

TV in Taiwan drives me nuts (let’s not even discuss Thai television!). What really strikes me as odd is the fact that while Taiwan is so very technologically advanced, and Taiwanese people are used to being on the edge of emerging technology, the cable television systems here provide such poor quality entertainment that I am very surprised people put up with it. Taiwanese are so technologically hip that you can walk through the store with your Taiwanese pal, and s/he will be able to tell you anything you wanna know about the latest MP3 player, digital camera, mobile phone, computer or gadget. But, that same person will go back home and watch probably what is one of the worst cable television signals I’ve ever experienced, not to mention the programming quality of the on-air product.

Taiwanese Teppanyaki

Teppanyaki (teppan’yaki?) is a type of Japanese cuisine that uses an iron griddle to cook food. The word “teppanyaki” is derived from teppan (??), which means iron plate, and yaki, which means grilled.

So, now you know where this style of cooking originates. We don’t use an iron griddle, but rather a modern version of it - a teppanyaki pan. One puts a bit of oil in the bottom and heats up the pan, then adds food to it. What makes the flavor unique is adding your own personal sauce mixture to the cooking food. Here, let me show you:

Teppanyaki Taiwan Style
This is the teppanyaki pan after the first round of food has been added and before the sauce. The removable pan sits on a base and is heated by induction. The range of heat control is excellent. You can boil, fry and keep food warm without burning it. This is a very versatile pan and it’s really great for unexpected guests because you can throw an excellent meal together in minutes.

Teppanyaki at Home
This is another example of a finished teppanyaki dish that we recently enjoyed. Next I’ll show you what the first dish looks like after adding the sauce and then we’ll let the dish brown up nicely.
