Hui-chen and I are off in China and Hong Kong on business for a few days. We’ll be back soon with some great photos and stories to tell! In the meantime we’d like to show you some dishes that Hui-chen’s mother cooked during Chinese New Year.

By now, everyone knows that these are the family specialty. Hui-chen makes her own version too [2], and they are great.

We came back home one afternoon and saw that Ma had put the 2 pans out to cool in the breeze of a fan. She was cooking down the wok and also the meatballs.
Later though, she had this little trick up her sleeve:

Now, imagine if you will, the richest, most flavorful dumpling meat stuffing you’ve ever had.

Then, imagine if you can, that someone beat eggs and fried them up into a thin crepe that was cut into skins.

And then someone would stuff those egg skins and fry them in the wok.

If you can imagine that, then you know what you are looking at! I couldn’t believe it, but these were like mini omelet-burritos with dumpling meat inside. Lemme tell you – when these puppies hit the dinner table they weren’t the only things that were stuffed!
I can’t wait to go back for more!

That looks so good. I feel my waist expanding just looking at the pictures.

Brunty » haha, sorry mate! they are pretty easy but one does have to be careful about breaking the egg skins. of course Hui-chen’s mother is an expert at it and she makes it look easy. thanks for reading.
